This is one of my boyfriend’s favorite side dishes. This recipe comes from his family and tastes
amazing every time! It’s a quick
recipe to make and provides 2 servings of vegetables.
Ingredients:
2 zucchini
2 small yellow squash
1 Roma tomato
¼ Yellow onion
Shredded reduced fat cheddar cheese
Extra Virgin Olive oil
Sea Salt to taste
Directions:
Slice the zucchini and squash, and dice yellow onion. Add squash, zucchini and onion to a
large frying pan and cook with olive oil over medium heat until soft. Dice tomato and add to the zucchini
mixture. Heat until tomato is
warm. Sprinkle with shredded
cheese and wait until cheese melts.
Add salt to taste.
Serves 3-4
