Ingredients:
1 cup sugar substitute
1/2 cup sugar
1/4 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon cloves
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup whole wheat flour
generous 1/2 cup all purpose flour
1/2 cup plain applesauce
1/2 cup cold water
1 cup pumpkin (a little more than half a 15 oz. can)
1/2 cup Dark Chocolate Chips
Directions:
Mix all ingredients together in a large bowl and stir until combined. Spray muffin tins with cooking spray and distribute the mixture into muffin tins.
Bake at 325 degrees for about 45 minutes. I always check on them after about 40 minutes to make sure they don't overcook. Remove from heat and serve
Makes 12 muffins
