Healthy Pumpkin Muffins

I made these muffins and my neighbors were lining up in the halls to come try them.  Okay I'm lying but they were that GOOD. Pumpkin is naturally healthy for you and a great baking substitute to try.  Follow this recipe for an amazing non-indulgent treat or an on the go breakfast option.

Ingredients:
1 cup sugar substitute
1/2 cup sugar
1/4 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon cloves
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup whole wheat flour
generous 1/2 cup all purpose flour
1/2 cup plain applesauce
1/2 cup cold water
1 cup pumpkin (a little more than half a 15 oz. can)
1/2 cup Dark Chocolate Chips

Directions:
Mix all ingredients together in a large bowl and stir until combined. Spray muffin tins with cooking spray and distribute the mixture into muffin tins.
Bake at 325 degrees for about 45 minutes.  I always check on them after about 40 minutes to make sure they don't overcook.  Remove from heat and serve

Makes 12 muffins
