Mashed Sweet Potatoes

Sweet potatoes are a super food and a tasty way to get vitamins and fiber in your diet.  I love serving mashed sweet potatoes as a side dish.  This recipe is simple and a healthy alternative to regular mashed potatoes.

6 small sweet potatoes
1 tablespoon butter
Skim milk
Sea salt
1 tablespoon light brown sugar

Peel sweet potatoes with vegetable peeler. Make holes in the potatoes with a fork.  Cook sweet potatoes until soft. (Depending on how much time you have, you can bake them for about 50 minutes, boil them for about 25 minutes or microwave them for about 6 minutes).  Place cooked sweet potatoes in in a large bowl and beat with a hand mixer or mash with a potato masher until smooth.  Add butter and skim milk until you get the desired consistency.  Sprinkle in salt to taste and add the brown sugar.  Mix until well blended.
