One of my favorite dinner recipes: Feta Chicken. This dish is delicious! Super easy and also heats up as leftovers nicely. Whip this up for a satisfying weeknight meal.
1 boneless skinless chicken breast
3/4 cup spinach
2 tablespoons feta cheese
Preheat oven to 375. Pound chicken to .5 inch thickness. Cook the mushrooms slices with olive oil over medium heat until soft. Sautee the spinach in a skillet with a touch of olive oil until soft. Sprinkle feta cheese onto the middle of the chicken breast. Layer the spinach and mushrooms on top. Fold the edge of the chicken breast up, like a taco. Place toothpicks through the top of chicken breast so the chicken holds the position. Put chicken into the oven and bake for about 40 minutes, or until chicken is fully cooked.
