Healthy Mac and Cheese

Everyone loves Mac and Cheese…but nobody loves the hundreds of calories it typically includes. I've tested a few healthy Mac and Cheese recipes and this one is my favorite! It delivers great flavor for a fraction of the calories.

cooking Spray
4 ounces Whole Wheat Macaroni noodles, 
1/3 yellow onion
3 garlic cloves 
½ teaspoon dry mustard
pinch cayenne pepper
1 cup reduced fat shredded cheddar cheese
1/3 cup nonfat greek yogurt
¼ cup whole wheat panko 
¼ cup grated parmesaen cheese

Preheat oven to 425 degrees. Cook Macaroni according to packaged directions and drain.  Slice the onion and put it in a microwave safe dish with garlic cloves and ½ cup water. Microwave water, garlic and onion for 8 minutes.  Take out of microwave and blend together until smooth.  Put onion and garlic mixture in saucepan with dry mustard, and cayenne heat over medium heat until it simmers. Whisk in Cheddar until melted. Remove from heat and stir in yogurt. In a medium bowl, toss the macaroni with the cheese sauce, season with salt to taste. Pour the mixture into a greased 8x8 inch-baking pan.  In another bowl, mix panko breadcrumbs and parmesean and sprinkle over the macaroni. Bake until Macaroni is hot and bread crumbs are golden, about 15 minutes.

Serves 4,  240 calories per serving
