This quinoa recipe is healthy, quick, and delicious! A great side for your next meal. I love making this alongside chicken breast for dinner, and pack the leftovers up to take to work the next day. Give this quinoa recipe a try and let me know what you think:)
*Note this recipe serves 4, so make sure to divide it in half if you don't need that much.
1.5 cups quinoa
2.75 cups low sodium chicken broth
juice of 1 lemon
fresh basil, chopped (can use canned basil if you don't have fresh, about 2 tbsp)
Put lemon juice, chicken broth and quinoa in a saucepan over medium high heat. Bring to a boil and then cover and reduce heat to simmer. Let simmer until all of the liquid is absorbed, about 15 minutes.
Mix in the basil, shake on a little onion and garlic powder and give a good stir.
