Spaghetti Squash



Love pasta but don't love the carbs? Try Spaghetti Squash.  This healthy substitute is almost as good as the real thing!  The texture is crunchier and it takes a little longer to prepare, but other than that the differences between spaghetti squash and spaghetti are minimal.  I love using spaghetti squash as a pasta substitute because it's an easy way to get your vegetables in without much sacrifice.


Almost every grocery store carries spaghetti squash.  Once you get your squash, cut it in half lengthwise and bake at 375 degrees for about 45-50 minutes depending on the size of your squash.  You will know if it's done if when you scrape a fork along the top of the squash, strands the size of spaghetti start to come off like the image above.   Scrape the walls of the squash on both halves until you have gotten all of the squash out.  We like to eat ours topped with a little red sauce mixed with ground turkey and veggies.  Enjoy!
