Meyer Lemon Chicken

3 boneless skinless chicken breasts or 6 sliced boneless/skinless chicken tenders
1 teaspoon salt
¾ teaspoon black pepper
2 tablespoons olive oil
1 pound small red potatoes, quartered
1 lemon cut into 1/3 inch thick slices and seeded
1/3 cup chopped shallots
4 garlic cloves thinly sliced
½ cup dry white wine
1 teaspoon chopped fresh thyme leaves
1 cup unsalted chicken stock or low sodium chicken broth
2 tablespoons lemon juice
1 tablespoon butter
1 tablespoon fresh parsley leaves

Preheat oven to 400 degrees. Heat a large skillet over medium high heat. Sprinkle chicken with ½ teaspoon salt and ½ teaspoon pepper. Coat with cooking spray and add to the pan. Cook about 6 minutes and then flip over and place into a baking dish. Bake for about 12 minutes.
In a skillet, add 1 tablespoon olive oil, potatoes and ¼ teaspoon salt.  Cook potatoes over medium high heat, 3 minutes on each side or until browned. Remove the potatoes from the pan.  Add the lemon slices and cook 1 minute on each side.  Remove the lemon from the pan, add the remaining 1 tablespoon olive oil to the pan and then add the shallots and garlic. Saute about 3 minutes.  Add the wine, chopped fresh thyme, and cook until the liquid almost evaporates.
Return the potatoes and lemon slices to the pan. Add the chicken stock, remaining ¼ teaspoon salt, ¼ teaspoon pepper, lemon juice, and butter and cook until butter and most of chicken stock dissolves. Layer the chicken over the potatoes in the pan and cook a few more minutes, until chicken is warm.

Breakfast Sandwich

Start your day off with this delicious egg sandwich!

1 piece whole wheat bread
1 egg
1/4 avocado, sliced
1 teaspoon light mayonnaise
1oz shredded cheddar cheese

Cook egg to your liking, I like mine over hard. Toast bread in a toaster oven, adding cheese about 2 minutes before complete. Cut bread in half and layer the avocado and mayo on one side of the bread. Place the egg on the avocado and then top with the other half of the bread. Eat like a sandwich. Enjoy!

Chocolate Peanut Butter Banana Protein Smoothie

Protein smoothies are a smart breakfast option. They help you stay full all morning, and provide the essential protein you need to start your day.  If your'e anything like me, your stomach is growling around 11:00 am and you are searching for a snack.  Whenever I have protein smoothies for breakfast I'm never hungry before lunchtime.   This was the first recipe I tried using protein powder.  It really is a great recipe to start with!  This smoothie is my favorite for breakfast, but it also is a nice post workout meal.

1 scoop chocolate protein powder
1 banana
1 tbsp peanut butter
1/2-3/4 cup skim milk

Combine 1/2 cup skim milk, protein powder, banana and peanut butter into a blender.  Blend until smooth.  If the smoothie is too thick, add a little more milk.

Next time you've got the itch for brunch check out Trocadero. Eric and I went to Trocadero last weekend and really enjoyed it.  We ordered the pancakes, breakfast tacos and fruit and yogurt parfait.  All were amazing. Eric really loved the tacos and the pancakes were some of the best i've ever had! They had a slight citrus taste that was to die for.  Check out Trocadero for a guaranteed great brunch.

Lululemon is everything. As much as I’m against overpaying for clothes I can justify every penny I spend at lululemon because the quality is top notch.  My new obsession is the cool racerback tank. This tank is perfect for every kind of workout. I love the long length and tight fit. Healthy Snack: Mini Sweet Peppers

It's been said that Americans consume up to 600 calories a day from mindless snacking. That is A LOT!  Keep your snacking in check with these mini sweet peppers. I bring these in a bag to work and munch on them all afternoon.  They're great to eat on their own or dipped in your favorite veggie dip.  You can find these at your local grocery store. Most stores have started selling them in bags of about 30 peppers for around $5.

Freelance Work: BVK Fashion show

This year I had the honor to work with some of the fabulous employees from BVK Advertising agency. BVK is in the process of redoing their office interior and thought it would be the perfect time to revamp their corporate dress code. It was my job to coordinate a fashion show using BVK employees as my beautiful models and showcase different ways to dress nice-casual to work.  I did some shopping and styled everyone's look. Here are some of the shots from the runway.  I also did all of their makeup so they were ready to strut their stuff on the catwalk!  I love working with people to develop their personal style and help them look and feel their best. Shen Yun

The show is quoted as being "an exhilarating show you will never forget".  Eric and I love going to see shows and are pretty excited to see this one! Zucchini Cupcakes with Greek Yogurt Frosting

This healthy recipe comes from the lovely blogger, Eat Yourself Skinny .   I haven't tried these muffins yet but am excited to bake them this weekend! The muffins are healthy enough to enjoy for breakfast, a snack or even dessert:) Each muffin is only 150 calories and has 6 grams of protein.

1 cup whole wheat flour
1/4 cup raw sugar
1/4 cup packed brown sugar
1 teaspoon cinnamon
1/2 teaspoon baking powder
2 eggs
1/4 cup skim milk
1 cup cooked white quinoa
1 cup shredded zucchini
3/4 cup unsweetened applesauce
1 teaspoon vanilla

6 oz plain fat-free greek yogurt
2 tablespoons light agave nectar
1 teaspoon vanilla
1 teaspoon shredded lemon peel to use as a garnish

Preheat oven to 350 degrees. In a bowl, whisk together flour, sugar, cinnamon, baking powder, salt and baking soda and set aside.  In another bowl, beat together the eggs and milk and then add quinoa, zucchini, applesauce and vanilla and stir until well mixed.  Add the zucchini mixture to the flower mixture and stir until just combined- be careful not to over stir!  Coat a muffin tin with nonstick cooking spray and fill each tin 3/4 full.  Cook for about 20 minutes or until a toothpick comes out clean.
To make the frosting, whisk all of the frosting ingredients into a bowl until smooth.
Let the muffins cool before you frost. Frost each muffin with 2 tablespoons frosting. Garnish with a lemon peel and enjoy!

Serves 12

Happy Valentine's Day everyone!  Here's a little collage of what my Valentine's Day looked like <3  We celebrated a day early with a decadent meal at Circa 1880.  This morning we continued our celebration with   heart shaped bagels for breakfast. Kale Chips

There are a million reasons why you need to eat kale.  Kale is the superfood! Low calorie, high fiber, loaded with Vitamin A, C, K, calcium, iron, and antioxidants.  If you're not ready to mix up a kale salad, try making delicious kale chips!  This recipe is super easy so give it a try.

1 bunch kale
olive oil
sea salt

Preheat oven to 350.  Break the kale leaves off the stem and layer on a baking sheet. Drizzle a little olive oil over the kale leaves and top with sea salt.  Bake at 350 for 10-15 minutes or until leaves start to brown.  

Tilapia with Tomatoes and Olives

Tilapia is top on my list when it comes to fish.  I enjoy finding new recipes using fish and this one I found from Self Magazine is full of flavor.  The original recipe calls for Sole but I swapped it with Tilapia instead.  I also used only about half of the butter that the recipe calls for.  Try this for a healthy week night meal.

Every lady can benefit from a little lip color. If you don't wear lipstick already, why not?  If it's because you never have, or are afraid to try it trust me in that these shades are the perfect pinks to start with.  I (proudly) own all of these lipsticks and glosses and they are my favorites. Prabal Gurung collection for Target

FINALLY Prabal Gurung's collection for target is available!  I love the bold print and bright colors of this line.  In order to get these pieces you have to act fast!  I was at target bright and early this morning and although my favorite piece (the pullover sweatshirt) was sold out I still managed to walk away with this fun and flirty dress and amazing sleeveless blouse. One thing to note about the line, it runs big! I would usually wear a small and I got an XS in both pieces. Can't wait to wear these!

Last weekend I went to Miss Cupcake with a friend and all I have to say is yum! This little shop is simply adorable. Serving an assortment of freshly baked cupcakes, coffee and soft drinks Miss Cupcake has your afternoon covered. On top of the amazing sweet treats, the owner even said she wouldn't mind if you brought in a little wine to sip while indulging...sounds good to me! Beef Filets with Red Wine Sauce

You know those signs, the ones that say "I love cooking with wine, sometimes I even put it in the food" ? That is how I felt making this savory dish!  Because I, like many of you, don't want to splurge $30 for a filet, we got New York Strip steaks because they were on sale.  Obviously this portion of meat is bigger than 4 oz. so I made sure to only eat half! Which was actually awesome because I took the leftovers for lunch the next day:)  We also made sure to trim the fat off of the meat before cooking.

I really enjoyed this meal.  It's nice to have steak once in awhile and the red wine sauce is pretty good.  I could have gone without the cornmeal on the veggies, the added taste and texture didn't do much for me.  So, if you're looking to cut calories don't bother dusting the veggies with cornmeal.

I grew up with LSilver and her Style – she and my sister have been best friends since they were five years old.   In a family of three sisters, she is our fourth.  Although I am four years older than her, a small difference that can seem big when you’re young, I have turned to her for fashion advice ever since I was a teen and she a pre-teen.  I remember getting ready for my senior prom in our kitchen with a gaggle of my girlfriends, and Lindsey helping us all with the finishing touches. 

That lifetime of sisterly style advice is why it was an unhesitating decision to have Lindsey do the makeup at my wedding.  My bridesmaids and I were all so excited as we planned our dresses and our hair, but we didn’t even think about our makeup, knowing Lindsey would know best.  On the day of the wedding, we got our hair done and our dresses ready, and piled into Lindsey’s hotel room.  It was there that she spread out all her goods – her zillions of colors and brushes and blushes – an artist’s palette.  We sat down on the bed and let her go to work.

Lindsey had known my sisters and me for her whole life.  However, she had just that very moment met my soon-to-be sister-in-law, as well as our adorable little flower girls.  She took one look at all of us – those she has known forever and those she had just met – and knew instantly how to make us up – the artist with her canvases. 

Every one of us had our makeup perfectly done to accent our looks and fit our personalities.  My sister Colleen had black eyeliner and the softest pink eye shadow; my sister Lizzie had nude tones that fit her natural-living personality; our beautiful flower girl had golden eyeliner that set her off in the ecstasy unique to a five-year-old; I had eyeliner that softly sparkled.  We looked in the mirror and knew we were in the hands of the best.  We zipped up our dresses and headed out to walk down that aisle.

Healthy Chicken Tetrazzini

My Boyfriends favorite meal is Chicken Tetrazzini and although I agree it's yummy, I never like eating it when prepared the traidtional way. A creamy white sauce scares me unless I've prepared it and know exactly what's in it.  Well thanks to Cooking Light,  no need to fear this dish any more!  Cooking Light gives us an amazing Chicken Tetra recipe for about half the calories.  Check out the recipe here: Cooking Light Chicken Tetrazzini . 

*Important to note: the cooking light recipe serves about 12 people! So if you don't have to serve a family make sure to divide recipe accordingly.

Valentines Day Gift Guide

Fellas, let's cut to the chase on what to get your lady for Valentine's Day. This is what we want (and expect) Flowers, Chocolate (find a way to combine the two and you're golden) and a nice dinner. Depending on how special you want to make this Valentine's Day, something sparkly (jewelry) is also appreciated.  This is not the time to get your girlfriend that bike she's been talking about forever or the shoes she just can't live without. This is the time to gift something meaningful and feminine.  *Note, she will be talking about this with her co-workers so the more thoughtful the better!

Flower Guide:
Breaking this down for you in 3 tiers....(with a visual...)

Tier 1: You have been on less than 10 dates and don't say the L word. Give flowers that are shades of yellow, orange, white, and green.  In the image above, this is the top row.

Tier 2:  Dating 3-9 months. Give flowers that are pinks, purples, and whites. In the above image, these are the flowers in the middle row.

Tier 3: Dating over a year. Reds and golds are the colors of true love. Give arrangements that look like the bottom row.  If you're married, giving an arrangement of your wedding flower is a cute and thoughtful idea.

Fine note: Please don't give carnations, unless you are in 6th grade.

Surprising your lady at work is clever. Send the flowers to her at work or have cupcakes (red velvet) delivered to her to share with her coworkers.

*Last, but not least- don't forget the card!! The words are what counts. If you're in a "Tier 1" relationship, a few words only- nothing too serious.  For the rest of you, this is the time to show your romantic side. Let your lady know you care!  Make your own card or get one that is short and sweet. If you buy a card you are not excused from writing a personal message on the inside.

Valentine's Day Dining Guide

Men of Milwaukee, listen up! Valentine's day is right around the corner and if you have a sweetheart it's time to start planning.

Valentine's day is one of the most difficult days of the year to get a reservation, so make the call now before it's too late.  No matter if you've been dating for 3 years or if you've only gone on 3 dates this is the night to make your lady feel special.  Here is a list of a few Milwaukee spots that are prefect places for a nice Valentine's Day meal:  Pasta Tree , Pastiche , Mimma's , Balzac , Vino 100 , Harbor House , Cuvee , Swig

If you really want to impress, try cooking yourself! There's nothing more romantic than giving your lady the night off from cooking, and whipping up something special yourself. Here is what you need to know; we want something light and nothing too crazy.  A few recipe recommendations are listed below, pair them with a side salad or fresh dinner rolls.  Just make sure you prep something that isn't going to put us in a food coma. Oh, and don't forget the wine!! If you're making fish or chicken go with white, if you're making tenderloin or pork do red.

If you really want to go the extra mile, dessert is the key. These are some of my favorites: Chocolate Pudding Pie , Chocolate Souffle , Strawberries and Cream

As far as setting the mood...candles are a must, set the table ahead of time, dim the lights a little, and aside from that just make sure your place is clean!

Lentil-Tomato Soup

This soup is not only delicious, it's incredibly good for you! Lentils are a superfood and help with weight loos by providing both protein and fiber to your body.  Load up on this recipe and serve it for dinner or take it with you to work for lunch.

4.5 cups water
4 medium carrots, sliced
1 medium onion, chopped
2/3 cups dried lentils
1 can (6 oz) tomato paste
2 tablespoons minced fresh parsley
1 tablespoon brown sugar
1 tablespoon white vinegar
1 teaspoon garlic salt
1/2 teaspoon dried thyme
1/4 teaspoon dill weed
1/4 teaspoon dried tarragon
1/4 teaspoon pepper

In a large saucepan, combine the water, lentils, carrots and onion. Bring to a boil then reduce the heat, cover and simmer for 20-25 minutes or until veggies and lentils are tender.  Stir in all the remaining ingredients and return to a boil. Reduce the heat and simmer, uncovered, for about 5 minutes.

Strawberries & Cream

Craving something sweet and seasonal? Make this Strawberries & Cream recipe for a festive and light Valentine’s day treat!

7 strawberries
1 tbsp almond slivers
1 tbsp mini chocolate chips (optional)
lite Cool Whip

Slice strawberries lengthwise.  Place them in a bowl and spray cool whip on top.  Sprinkle with almond slivers and chocolate chips

Serves 1

Vino 100

Vino 100 is the place to go if you’re a wino.  It’s the perfect spot to cozy up and share a bottle (or 2) with friends. Also would be a cute and romantic date. Vino 100 features bottles upon bottles of wine priced anywhere from $8 to $300.  Although they do have a selection of finer expensive wines, the majority of the wines are under $25.  They offer a small assortment of food if you want to munch while you drink-cheese and hummus plates and a variety of dips are what you can choose from.  Most Thursday nights they play Trivia which actually is a lot of fun! I love Vino 100 not only because it’s a wine bar, but because it’s the whole package.  I think Milwaukee could use a few more places like this..!

Eat your Vitamins :)

Good morning everyone! With February being National Heart Month I had to stock up on all of my vitamins and supplements.  As pathetic as it sounds, I'll only take vitamins if they are in gummy form:) I really hate taking the horse tranquilizer size pill vitamins in the morning, so I substitute with the easy chewable gummies:) I take a probiotic, a Multivitamin and a B Complex.  If you only want to take one, go with the Multivitamin.  However, the probiotic gummies are an easy way to get the healthy bacteria you need.  If you don't eat yogurt regularly than you should really consider a Probiotic supplement.

Why I eat my vitamins:

Probiotics: Probiotics are healthy bacteria that help maintain the balance of organisms in our intestines.   Probiotics reduce the negative bacteria in our bodies and promote a healthy digestive system.  I bought these  Probiotic Gummies from Amazon for only $12.14.

Multivitamins: Multivitamins are dietary supplements containing recommended daily values of several important nutrients that help keep our bodies healthy.  You've heard it before from your mom, your doctor, your grandmother; you should take a daily multivitamin.  Multivitamins help prevent nutrient deficiencies that can add up over time.  They give us essential vitamins that we don't get enough of from our diets such as Vitamin D, and also things like calcium and potassium.  Getting your vitamins through food is preferred, but taking a multivitamin on top of eating healthily is beneficial to fill in your nutrient deficiencies. I buy these Gummy Multivitamins  from Amazon for only $9.59.

B-Complex: The last vitamin I take daily is a B-Complex. B-Complex supplements combine several B vitamins including; B6, B12, B3 (Niacin), B5 (Pantothenic acid) and Biotin.  B vitamins are natural energy producers.  They are also known to ease stress, reduce heart disease risk, and aid immune function. I bought this 3 pack of  B Complex Gummy Vitamins from Amazon (70 gummies per pack) for $11.97.

If you don't take any vitamins already you should start now! As I mentioned earlier, it's important to try and get your vitamins through a healthy diet, but supplementing on top of that will ensure your body gets the daily nutrients it needs.
