Ingredients:
4.5 cups water
4 medium carrots, sliced
1 medium onion, chopped
2/3 cups dried lentils
1 can (6 oz) tomato paste
2 tablespoons minced fresh parsley
1 tablespoon brown sugar
1 tablespoon white vinegar
1 teaspoon garlic salt
1/2 teaspoon dried thyme
1/4 teaspoon dill weed
1/4 teaspoon dried tarragon
1/4 teaspoon pepper
Directions:
In a large saucepan, combine the water, lentils, carrots and onion. Bring to a boil then reduce the heat, cover and simmer for 20-25 minutes or until veggies and lentils are tender. Stir in all the remaining ingredients and return to a boil. Reduce the heat and simmer, uncovered, for about 5 minutes.

Ok I've made a few soups in my day but I have never enjoyed eating a homemade soup like this before. I absolutely love this recipe! Hot or cold it makes no difference it is always delicious. I encourage you all to try as it is easy to make and your guests will think you are a gourmet chef!
