Lentil-Tomato Soup


This soup is not only delicious, it's incredibly good for you! Lentils are a superfood and help with weight loos by providing both protein and fiber to your body.  Load up on this recipe and serve it for dinner or take it with you to work for lunch.

Ingredients:
4.5 cups water
4 medium carrots, sliced
1 medium onion, chopped
2/3 cups dried lentils
1 can (6 oz) tomato paste
2 tablespoons minced fresh parsley
1 tablespoon brown sugar
1 tablespoon white vinegar
1 teaspoon garlic salt
1/2 teaspoon dried thyme
1/4 teaspoon dill weed
1/4 teaspoon dried tarragon
1/4 teaspoon pepper

Directions:
In a large saucepan, combine the water, lentils, carrots and onion. Bring to a boil then reduce the heat, cover and simmer for 20-25 minutes or until veggies and lentils are tender.  Stir in all the remaining ingredients and return to a boil. Reduce the heat and simmer, uncovered, for about 5 minutes.

  1. Ok I've made a few soups in my day but I have never enjoyed eating a homemade soup like this before. I absolutely love this recipe! Hot or cold it makes no difference it is always delicious. I encourage you all to try as it is easy to make and your guests will think you are a gourmet chef!
