1 cup whole grain linguine
4 oz chicken breast
vegetables of your choice, I used artichokes, broccoli, tomato and mushroom
1 teaspoon chopped garlic
1 teaspoon olive oil
2 tablespoons white wine
1 teaspoon lemon juice
salt and pepper to taste
Directions:
Cook pasta according to package. Dice chicken into cubes and cook in a skillet until cooked through, set aside. Saute garlic, mushrooms, artichokes and broccoli with the olive oil for about 5 minutes. Add the tomatoes, chicken and wine and simmer until wine is slightly reduced, just a few minutes. Add the linguine, lemon juice, salt and pepper to combine all ingredients. Serve and enjoy
