If you’re in the mood for pizza but want to cut back on calories and carbs, try swapping traditional pizza crust for cauliflower pizza crust. Yes, you read that right. Cauliflower is the main ingredient in this pizza crust! This recipe is perfect for pizza night because unlike traditional pizza recipes, it avoids loading up on carbs before bed. Top with whatever pizza ingredients you like. I made this with my neighbor and we made two pizzas, one with red sauce and one with white sauce, both were delicious:) Give it a try and let me know what you think!
Ingredients for crust:
- 1 medium head cauliflower, cut into florets
- 1 egg
- 1/2 cup mozzarella, shredded
- 1 teaspoon oregano or Italian seasoning blend
- salt and pepper to taste
Preheat oven to 450. Rice cauliflower in a food processor or blender. This should yield about 3 cups of riced cauliflower. Place the cauliflower in a microwave safe dish and microwave for 8 minutes. Squeeze out any excess moisture. Mix all of the remaining crust ingredients with the cauliflower in a large dish until combined. Line pizza tray with parchment paper and flatten crust onto tray. Cook the crust for about 15 minutes or until crust is golden brown. Remove crust from the oven and top with pizza ingredients of choice!
