After a week long indulgent vacation, I was ready for a healthy meal! For dinner, I decided to go with this light and delicious shaved brussels sprouts salad. I've ordered shaved brussels sprouts salads at restaurants before and loved them, so I decided to make my own:) This salad is a perfect summer side or main dish. Give it a try!
Ingredients:
1 lb brussels sprouts
1/2 red onion, thinly sliced
1/2 cup parmesan cheese
ground black pepper
Sauce ingredients:
juice from 1 lemon
1 teaspoon honey
1 teaspoon dijon mustard
3 tablespoons olive oil
generous dash of salt
Directions:
Using a mandoline slicer, shave brussels sprouts into a large bowl. Add the parmesan cheese to the bowl. Slice the onion into thin slices and let them soak in a bowl of cold water for 10-15 minutes. Once the onion has soaked, add them to the bowl with the brussels sprouts and cheese. In a small bowl, mix all of the sauce ingredients together until combined. Pour the sauce over the brussels sprouts. Toss the salad and sprinkle with fresh black pepper.
Serves 4
