Chocolate Souffle


The sight of this makes my Sweet tooth excited!  This decadent chocolate souffle is guaranteed to hit the spot.  Make this on your next at home date night and impress your lover:)

Ingredients:
7 ounces finely chopped semisweet or bittersweet chocolate
4 tablespoons unsalted butter
3 large egg yolks
3 tablespoons warm water
1/2 cup sugar (you can do 1/4 cup sugar and 1/4 cup sugar substitute to cut calories)
8 large egg whites
1/2 teaspoon fresh lemon juice
powder sugar

Feta Chicken


One of my favorite dinner recipes: Feta Chicken.  This dish is delicious! Super easy and also heats up as leftovers nicely. Whip this up for a satisfying weeknight meal.

Ingredients:
1 boneless skinless chicken breast
3/4 cup spinach
3 mushrooms
2 tablespoons feta cheese
olive oil

Directions:
Preheat oven to 375. Pound chicken to .5 inch thickness. Cook the mushrooms slices with olive oil over medium heat until soft. Sautee the spinach in a skillet with a touch of olive oil until soft.  Sprinkle feta cheese onto the middle of the chicken breast. Layer the spinach and mushrooms on top.  Fold the edge of the chicken breast up, like a taco.  Place toothpicks through the top of chicken breast so the chicken holds the position.  Put chicken into the oven and bake for about 40 minutes, or until chicken is fully cooked.

Serves 1

Washing your Makeup Brushes


I'm always surprised to hear how infrequently people wash their makeup brushes.  You would think that living in a society where we wash our sheets weekly, our counter tops daily and our hands hourly, that we would want to wash the utensils we use on our FACE more often.  Ladies, if you don't wash your makeup brushes, start now!  It's best to wash them weekly, but ever other will do.  You can wash them with baby shampoo or any other brush shampoo.  All you do is run them under warm water and massage the shampoo on the bristles in the palm of your hand. Rinse and let dry.  When you are drying it's best to lay them flat- don't stand them upright or you will damage the brushes.

Swig



Looking for a place to sit down for a glass of wine and share a few small plates? Try Swig.  Swig is one of my go-to places when I’m going out with a girlfriend. I like it because it’s just around the corner in the third ward and they have a handful of delicious small plates, sandwiches and salads.  The atmosphere is dimly lit and low key.  I must warn you though, that I do not recommend going for the entrees. I've been 0 for 2 in the entrees that I've ordered and can’t say that I would gamble my money and try another. 

What's good: These are the small plates I've tried and enjoyed. 

- Asiago Spinach & Artichoke Dip: Need I say more? This dish lives up to the expectations. A perfect option to start with.

-Breaded Three Cheese Ravioli: I’m a sucker for ravioli.  I really enjoyed the breading around the ravioli and didn't find that it was too much.  You only get a few pieces so you won’t overindulge here.

-Organic Baby Greens Salad: I ordered this salad for lunch and left perfectly satisfied. The fresh greens and citrus are an enjoyable combo.

-Tomato and Feta Salad: Simple and appetizing.

What's not so good: These are the 2 entrees that I've gotten, both were not my favorite and I would not recommend either.

-Grilled Salmon: I was excited to try Swig’s salmon because I loved everything else I’d eaten there. Unfortunately, it didn't deliver. The piece of salmon was tiny and unappealing. The fish was served over mushroom risotto that was entirely too salty.  Don’t bother with this dish.

-Baked Stuffed Chicken: Like the Salmon, this dish was also very salty. You could tell this was made ahead of time because it didn't taste fresh.  I understand prep work needs to be done in advance but this tasted like it had been sitting in the freezer for awhile. Not my favorite.

H&M Imitation Leather Boots

Morning Star Chik Patties


Even if you're not a vegetarian, these meatless Chicken Patties are an item you want in your freezer.  I make these and use them for sandwiches or eat them on their own. At only 140 calories a piece they can be enjoyed as a snack or as the main course in a meal. Morning Star Chick Patties can be found in the freezer section of most grocery stores.

"MockChicken" Sandwich


Okay so maybe it isn't as tasty as a real McChicken, but this sandwich is a pretty close second! Making healthy alternatives to some of your favorite fast food meals is possible.  Try my "MockChicken" recipe to satisfy that fast food craving for under 300 calories!

Ingredients: 
1 English Muffin (I use Thomas light multi-grain muffins)
Morning Star Chik Patties
Tomato slices
Lettuce
1 Tablespoon light mayonnaise
Onion slices

Directions:
Lightly toast the english muffin. Cook the chik patties according to the directions.  Assemble the sandwich by putting on the mayo, tomato, lettuce, and onion slices.

Serves 1

Roasted Vegetables


There's nothing better than good roasted vegetables.  I love roasting veggies because it's incredibly easy and almost always turns out perfect.  This dish is a perfect side to pair with any entrĂ©e.  Low calorie and delicious, eat your veggies!

Ingredients:
vegetables, any kind. Onion, brussels sprouts, carrots and potatoes are great options.
sea salt
pepper
oregano
basil
rosemary

Directions:
Preheat oven to 400 degrees. Toss vegetables with spices and layer into a baking dish.  Cook for 35-40 minutes or until tender

Turkey Chili


I got this yummy Turkey Chili recipe from allrecipes.com and love how easy it is to make. In one bowl, you are getting the protein and fiber you need to fill you up.  This recipe serves 8 so if you are not feeding that many make sure to divide, or make the full recipe and freeze half for later.

Ingredients:
1.5 tsp olive oil
1 lb ground turkey
1 yellow onion, chopped
2 cups water
1 28oz can crushed tomatoes
1 16oz can kidney beans, drained and rinsed
1 garlic clove, minced
2 tablespoons chili powder
1/2 teaspoon paprika
1/2 teaspoon ground cayenne pepper
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon ground black pepper
a splash of white wine

Directions:
Cook meet with the olive oil until browned in a large sauce pan over medium heat. Add chopped onion and saute for a few minutes.  Pour the water into the pot and then add all of the remaining ingredients. Reduce heat to low and then cook for another 30 minutes.

Serves 8

DIY Lamp Makeover



Lamps are the perfect way to brighten up (literally) any room. Like everything else, lamps can get expensive. To avoid unnecessary spending, go to a thrift store and get a lamp for under $10.  Or, you can do what I did and grab a few abandoned lamps from your parents basement :)

Supplies you will need:
-Lamps
-Acrylic or spray paint in your color(s) of choice
-Stencils if you want to make prints on the shades like I did.  I used Martha Stewart Stencils . You can find these online at the link provided or at any Michaels craft store

Directions:
Separate the lamp shade and the base.  Paint the base any color you want.  If you are hand painting with acrylic paint, you will need to do about 3 coats.  If you are spray painting, 1-2 coats should be enough.

For painting the shade, I recommend getting a lamp with a light or neutral shade so you don't have to paint a solid coat over the entire shade. This saves time, paint, and also makes sure the paint doesn't block any light the lamp gives off. I painted both shades and although I don't regret it, the amount of light the lamps give off is significantly less! Something to think about..

Pick out what stencil design you want to use. If you are not using stencils, you can paint simple stripes, dots, or anything else you can do free hand.  If you are using the stencils, line the stencil up where you want the print to start. Make sure to use a light coat of paint so that it doesn't clump up under the stencil and bleed onto areas that are supposed to be bare.  Rotate the shade as necessary to make sure you get all sides.

Wait for the paint to dry, and then reassemble the lamps.

Sweet Potato Wedges

I love finding healthy new ways to prepare vegetables. This is one of my favorites!  Baked sweet potato wedges are a good substitute for french fries. Serve them with a turkey burger and a side salad and you've got a perfect dinner.

Ingredients:
3 small sweet potatoes
Olive oil cooking spray
Sea salt
Black pepper
Lawry's salt

Directions:  Preheat oven to 400 degrees. Wash potatoes and then slice potatoes into thin wedges, about 1/3 inch thick.  Coat a baking sheet with olive oil spray and lay potato slices on the sheet.  Sprinkle salt, pepper and a touch of Lawry's salt onto potato slices.  If you want, you can drizzle a little olive oil on top, but this is not necessary.  Cook potato wedges for 10 minutes and then flip them.  Cook for another 5 minutes or until soft.

Serves 2

If you're anything like me, it's possible you have gone a little overboard on your scarves and accessories purchases.  I love a great scarf for so many different reasons, but don't love finding a way to store them and keep them organized during the off season.  This multi purpose hanger from IKEA is a problem solver.  It keeps scarves in one place and allows you to access them easily. All you do is string each scarf through a different hole and hang. Fitness Move of the Week: Power Point



Want to perk up that booty? Do the Power Point.  Self Magazine shares several workouts to lift and tone your backside. I like the move they call the Power Point because it's easy to do and also works the core.  Start on your hands and knees, extend your left leg and right arm simultaneously, hold for 5 seconds and then bring back down.  Try this at home, 12 reps on each side (x2) daily for a firmer tush.

Pomegranate Champagne Punch


I brought this yummy low cal cocktail to a holiday party this year and it was a hit! For only 128 calories this drink is one you can enjoy without the guilt (and hangover). Plus, it looks sophisticated :)

Ingredients: 
2 cups champagne
1 cup pomegranate juice (try to buy all natural so you don't get added sugars)
1 cup seltzer
1/2 cup citrus vodka
lemon twist for garnish

Directions:
Combine all liquid ingredients into a punch bowl, stir until blended.  Serve over ice with a lemon twist as garnish.

Serves 6

Thai-Namite



If you’re looking for a quick dinner with a small group of friends, or some great takeout I recommend Thai-Namite. I had the pleasure of going to Thai-Namite with my boyfriend for a quick weeknight meal.  The environment is calm, and the service is quick.  The decor isn't spectacular but that isn't always necessary.  The price was affordable and the food was delightful.

I had heard that the sushi was delicious so we ordered the Spicy Tuna Roll as a starter. The roll was fresh, had just the right amount of fish, and the spicy sauce was not overpowering.  This roll did have a bit more of a kick to it than your typical spicy tuna roll, but I loved it!

For our entrees, I ordered the Volcano Chicken and Eric ordered the Pad Thai.  From the description, Volcano Chicken isn't something I would typically order, but it came highly recommended so I decided I had to give it a try.  This dish was very good, but the portion was huge, could have been shared between 2 people.  The dish consists of fried chicken breast served over cabbage and other steamed vegetables with a light brown sauce that has a sweet and garlicky taste.  The crunch of the chicken and the vegetables was a perfect combo over rice. I have been warned that this dish is spicy, but at Thai-Namite I didn't think it was very spicy at all. I would definitely recommend giving this dish a try.



Eric ordered the Pad Thai which was also very good, probably one of the best Pad Thai dishes I've tasted.  The balance of sweet and sour with a hint of peanut in the sauce was perfect.  What makes this dish unique is that they serve it wrapped in an egg.  Don’t be turned off by the egg, it doesn't overpower the dish.  Again, another big portion that could have been shared.


Keurig


I owe my life to the inventor of the Keurig.  If you drink coffee, and don't own a Keurig, it's time to make that purchase. Keurigs are simply amazing. They save time, don't make a mess, and they make a cup of coffee in under 20 seconds.  This machine has been a life saver for me.  It's so nice to be able to run out of the house in the morning and make a quick cup of coffee on the way without having to clean up the coffee machine after.  Investing in a Keurig will not only save you time, but it will save you money as well.  A Box of 24 K-Cups costs about $12, that means only $0.50 per cup of coffee!

I personally own 2 Keurig Platinum edition brewers (yes I said 2- one at my desk at work, and one at home) and use them daily.  I like the platinum edition because you have 5 options to choose from when selecting what size coffee to brew, and you can also select what temperature to brew at.  Special Edition Brewers are nice too, they don't have all of the features of the Platinum version, but are still amazing.

Lemon Herb Quinoa


This quinoa recipe is healthy, quick, and delicious! A great side for your next meal.  I love making this alongside chicken breast for dinner, and pack the leftovers up to take to work the next day. Give this quinoa recipe a try and let me know what you think:)  
*Note this recipe serves 4, so make sure to divide it in half if you don't need that much.

Ingredients:
1.5 cups quinoa
2.75 cups low sodium chicken broth
juice of 1 lemon
fresh basil, chopped (can use canned basil if you don't have fresh, about 2 tbsp)
garlic powder
onion powder

Directions:
Put lemon juice, chicken broth and quinoa in a saucepan over medium high heat. Bring to a boil and then cover and reduce heat to simmer.  Let simmer until all of the liquid is absorbed, about 15 minutes.
Mix in the basil, shake on a little onion and garlic powder and give a good stir.  

Serves 4

Quinoa


Quinoa should be on everyone's grocery list!  This superfood has countless benefits and should be your grain of choice.  I recommend swapping quinoa for rice to make your meals even healthier.  Some of the benefits of quinoa are listed below:
-Quinoa is a complete protein, contains all 9 essential amino acids
-Gluten Free
-High in iron
-Contains more protein than rice
-Doesn't take as long to cook as rice (only about 15 minutes)

1/4 cup of quinoa contains 160 calories, 6 grams of protein and 3 grams of fiber.  Eat this super grain for healthy energy all day!

Spaghetti Squash



Love pasta but don't love the carbs? Try Spaghetti Squash.  This healthy substitute is almost as good as the real thing!  The texture is crunchier and it takes a little longer to prepare, but other than that the differences between spaghetti squash and spaghetti are minimal.  I love using spaghetti squash as a pasta substitute because it's an easy way to get your vegetables in without much sacrifice.


Almost every grocery store carries spaghetti squash.  Once you get your squash, cut it in half lengthwise and bake at 375 degrees for about 45-50 minutes depending on the size of your squash.  You will know if it's done if when you scrape a fork along the top of the squash, strands the size of spaghetti start to come off like the image above.   Scrape the walls of the squash on both halves until you have gotten all of the squash out.  We like to eat ours topped with a little red sauce mixed with ground turkey and veggies.  Enjoy!

Healthy Mac and Cheese




Everyone loves Mac and Cheese…but nobody loves the hundreds of calories it typically includes. I've tested a few healthy Mac and Cheese recipes and this one is my favorite! It delivers great flavor for a fraction of the calories.

Ingredients:
cooking Spray
salt 
4 ounces Whole Wheat Macaroni noodles, 
1/3 yellow onion
3 garlic cloves 
½ teaspoon dry mustard
pinch cayenne pepper
1 cup reduced fat shredded cheddar cheese
1/3 cup nonfat greek yogurt
¼ cup whole wheat panko 
¼ cup grated parmesaen cheese

Directions:
Preheat oven to 425 degrees. Cook Macaroni according to packaged directions and drain.  Slice the onion and put it in a microwave safe dish with garlic cloves and ½ cup water. Microwave water, garlic and onion for 8 minutes.  Take out of microwave and blend together until smooth.  Put onion and garlic mixture in saucepan with dry mustard, and cayenne heat over medium heat until it simmers. Whisk in Cheddar until melted. Remove from heat and stir in yogurt. In a medium bowl, toss the macaroni with the cheese sauce, season with salt to taste. Pour the mixture into a greased 8x8 inch-baking pan.  In another bowl, mix panko breadcrumbs and parmesean and sprinkle over the macaroni. Bake until Macaroni is hot and bread crumbs are golden, about 15 minutes.

Serves 4,  240 calories per serving

Fitness Move of the Week: Triceps Extensions

This week's move focuses on the back of your arms.  Triceps Extensions are an easy way to decrease that unwanted arm jiggle.  I love this move because it can be done anywhere- even if you don't have a weight.  To do this move, start with a dumbbell (I usually do 10 lbs or hold two 5 lbs weights) and hold it over your head, arms straight.  Slowly lower the weight backwards until you have made a 90 degree angle with your arms, shown in figure A.  Push your arms back up and repeat.  You can add this move to the end of your workout routine, or do a few reps while you are watching TV.  The more the better! See the full move here

Great Basics


Cute and comfy basics are my life.  I love this dolman sleeve tee from urban outfitters.  The colors are awesome and the style is updated AND flattering. I love the loose, non-clingy fit.   This tee is perfect for every occasion; it can be dressed up with a statement necklace, or worn with a pair of jeans or leggings for a casual look.  I have this top in several colors and always feel good when I’m wearing it. Smyth


Yum yum yumm! I love Smyth restaurant at the Iron Horse Hotel. The food, the atmosphere, the drinks, everything is perfection.  If you are celebrating something special or in the mood for a nicer meal you should definitely try Smyth.

I've been a few times and ordered the same thing, "The Beef", because it's just that good. You get two small tenderloin fillets wrapped in sage and bacon- delicious. The fillets are cooked just the way you want them.  The meat is served over mashed potatoes with mushrooms and onion. This dish is to die for, pair it with a glass of red wine and you'll savor every bite! Order the Beef, you won't regret it.


The calamari is also noteworthy, it may be the best I've ever had. The breading is crisp and flavorful and they give you a decent sized portion.

You can go to Smyth with anyone and everyone. The food is fantastic, and the service is decent.  Smyth is a little on the pricey side, but worth every penny.  Check out Smyth here


Flat Irons

When it comes to hair, having the right tools makes all the difference. This is not the place you want to go cheap, that $19 Walgreen's straighter may look appealing, but in reality you're much better off spending that $19 on a cheesecake. Don't waste that $19. Having the right flat iron is like wearing the right size bra, it is a MUST. With just one tool, I straighten, curl, and put waves in my hair.  Believe me when I say that investing in a good flat iron is an investment you need to make.  Below are 2 flat irons that I've tested. They are both good options and worth the money.

FHI Flat Iron
The FHI Flat Iron is the one I currently use.  I'm satisfied with it and love that it heats up so quickly.  The barrel is easy to maneuver and the plate edges are round which minimizes creases. Chi Flat Iron
The Chi Flat Iron was my first straighter, this is how I learned to maneuver my hair into flawless curls.  This is a great starter flat iron. I recommend the ceramic version to minimize damage to your hair.  This straighter doesn't come with the ability to adjust the temperature, but the heat gets hot enough to curl your hair so it lasts. Printed Pants

Chicken Nachos

Perfect for a game day appetizer or a meal, these chicken nachos are delicious!

Ingredients:
1 boneless, skinless chicken breast
tortilla chips
1/2 cup shredded reduced fat cheddar cheese
jalapeno peppers
banana peppers
1/4 cup shredded romain lettuce
1 roma tomato
1/2 avocado
1/2 red or yellow bell pepper

Directions:  
Cook chicken breast and shred it into small pieces.  Lay the tortilla chips on a plate and sprinkle the cheese on top.  Microwave chips and cheese for 1 minute, or until cheese is melted.  Remove from microwave and layer on all of the remaining ingredients.
