The Better Half Feature- Repost:Quinoa Stir Fry


Stir fry is my go to meal because it's quick and healthy! This dish is filled with protein, fiber and omega 3 fatty acids. Use any vegetables or protein you like. If you're vegetarian Tofu or tempeh are great substitutes.  I always make a double batch because it's great to pack the next day for lunch:)

Ingredients:
Trader Joes Original Soyaki Sauce
1 cup Quinoa
2 cups chicken stock
 1 chicken breast
vegetables-you can use whatever vegetables you want, I usually use mushrooms, onion, red or yellow bell peppers, edamame beans (I buy the frozen pack and put about ¼ cup into the mix), and broccoli.


Directions:
Place quinoa and chicken stock into a saucepan over high heat. Once the mixture comes to a boil cover and let simmer until liquid is absorbed, about 20 minutes.  Slice all veggies to desired size. Slice Chicken and cook in a medium frying pan with 1 teaspoon extra virgin olive oil over medium heat.  Take a large frying pan, drizzle mushrooms and onions with olive oil and cook over medium high heat for 4 minutes. Turn heat down to medium and all the rest of the vegetables. Cook until the vegetables are done, about 5 more minutes.  Once both chicken and vegetables are ready, add the chicken to the large frying pan with the vegetables. Turn heat down to low. Pour desired amount of Soyaki sauce over chicken and vegetables. Let it simmer for 5 minutes. Plate the quinoa and add the chicken and veggies on top.

Serves 2, but can be easily doubled

Fall Fashion Trends

Seasons are changing and that means so are our wardrobes.  Time to pack away summer silhouettes and resurrect fall favorites.  One of the best things about swapping in seasonal pieces is unpacking a box of old clothes and feeling like they're new again. I try to recycle as many pieces as I can from season to season but as trends continue to change there's always an excuse to go shopping. 


First on my shopping list- Tunics.  For those who don't know, tunics are longer length shirts.  What's great about tunics is they're long enough to sport over leggings meaning we don't have to transition to structured pants just yet! Another plus, if you're self conscious about the backside this top will cover without hiding.  

Next is one of the most timeless trends, statement jewelry.  I've got a pretty fabulous collection of statement necklaces thanks to Lizzibeth.  Her assortment proves it's just as important to update your accessories as it is your clothing. 

Last on the list-- you've heard me reference it before, the flip skirt.  This is hands down my favorite trend for fall. If you don't own a skirt in the flip body it's time to make the purchase. This body is flattering on all figures and achieves a flirty and polished look.

Wedding Countdown- less than a month!

It's hard to believe that in less than a month I'll be saying "I do" to the love of my life! Over the past few weeks I've been given the most lovely bridal showers. I'm speechless at how beautiful each shower was and am so grateful to have such wonderful people in my life! Feeling extremely blessed to have such amazing godparents, co-workers, soon to be sisters-in-law and mother-in-law, friends, sister/MOH and mother! Here's a glimpse into my bridal showers AND bachelorette party!

Korean Tacos


My best friend showed me this Korean Taco recipe and I can't get enough!  We made them last week and I've already made them for a second time since.  These tacos are spicy and fresh, I highly recommend making them!

Ingredients:
Corn tortillas
2 chicken breasts
2 long carrots, shredded
1 cup cherry tomatoes, sliced
1 bunch green onions, sliced
cilantro- optional

Sauce ingredients:
1/4 cup soy sauce
2 tbsp siracha
2 tbsp olive oil
2 tbsp rice vinegar
Juice from 1 lime

Directions:
Cut up chicken breast into small pieces and cook over medium heat with cooking spray.  Combine all sauce ingredients and set aside. Once chicken is done cooking add sauce to the chicken and let simmer until sauce thickens, about 4 minutes.  Warm up tortilla shells and spoon chicken mixture into shells. Serve with carrots, diced onion and tomato and cilantro.

Grilled Romaine Salad



Grilled romaine salad- a new favorite! Perfect as a healthy side dish for summer BBQ's.  You can make this for under $10 and in under 20 minutes. Enjoy!

Ingredients:
-2 heads romaine
-parmesan cheese
Dressing ingredients:
-3 tbsp olive oil
-1 tbsp dijon mustard
-1 tbsp lemon juice
-salt and pepper to taste
-1 garlic clove, minced

Directions:
Cut the bottoms off of the romaine heads and then slice the stalks in half lengthwise.  Mix together all dressing ingredients and then brush the dressing on the romaine wedges.  Set the grill temperature on high heat and place the romaine directly on the grill.  Let the romaine sit for about 3-4 minutes, or until browned.  Rotate the romaine so you get all sides evenly.  The stalks may separate so don't panic if they don't stick together!   Remove the romaine from the grill and sprinkle parmesan cheese on top.  Let the cheese melt for a minute and then it's ready to serve.

Best Friend's Bachelorette Party!






 Last weekend I hosted my best friend's bachelorette party! It was such an amazing night full of nothing but fabulous fun. I wanted to share some pictures from the party for anyone who may be in the midst of planning a bachelorette party.  I had a blast decorating and loved how it turned out.  If you need any decorating ideas, here you go! Balloons, flowers, candy, champagne, the list is endless.   All of the details really made for a memorable day and fun celebration.  Cheers!








Shirataki Spaghetti




Spaghetti for only 15 calories a serving---have you ever heard of such a thing? Well, it's time to get familiar because Shirataki noodles might be your new favorite.   
Eric and I cooked our Shirataki Spaghetti for dinner tonight. We prepared it like we would regular spaghetti, with marinara, fresh basil and parmesan cheese.  
I have to admit we were skeptical at first because the spaghetti seemed too good to be true. I mean come on it's gluten free, fat free, vegan and all natural! 
   That saves you about 200 calories compared to whole wheat spaghetti. 
The brand we bought was Pasta Zero and I highly recommend it.  The taste is similar to regular spaghetti but the texture is slightly less firm.
Next time spaghetti is on the menu try swapping out regular for shirataki. These noodles seem like they would also be great in a ramen dish or soup.

Whole Wheat Spaghetti with Sauteed Spinach and Garlic


After a very lengthy and very necessary break I'm back and ready to go! First on the menu? What else but whole wheat spaghetti with sauteed spinach and garlic.
Like many, I love any dish that requires minimal effort, minimal time in the kitchen and is packed with nutrition. In one plate you get vitamins, iron, and protein from the spinach and all our favorite antibacterial/antiviral/anti-inflammatory benefits from the garlic. 
This is a great little meal to make for a quick week night bite and also a nice option for those looking to pack a healthy lunch.

Ingredients:
Whole wheat spaghetti (1/2 to 1 cup)
2.5 cups fresh spinach
1 garlic clove
squeeze of lemon
parmesan cheese
oregano, salt, pepper to taste

Directions:
Cook the spaghetti as instructed.  In a medium size frying pan drizzle a touch of olive oil and turn the heat on medium.  Slice the garlic clove and place it in the pan with olive oil. Let the garlic sit stirring occasionally for about 3 minutes. Once the garlic is browned, add the spinach and sauté with the garlic, about 2 minutes.
Drain the pasta and combine with the spinach and garlic. Squeeze lemon on top of the pasta and top with a little parmesan cheese, salt and pepper.  Lastly, add your favorite herbs to taste. I love oregano so that's what I chose.  If you like a little heat adding crushed red peppers to this dish is a good idea:)

Peanut Butter Greek Yogurt Dip

On a scale from 1 to amazing this dip is deliciously amazing.  A coworker of mine brought it in for a work party and it was a major hit. This dip is not only delicious, but also super healthy! The protein from the greek yogurt and peanut butter matched with the fiber of an apple is a killer combo. I love the combo as a breakfast option or a satisfying snack.  The below recipe serves 1 but if you're making it for a group just multiply everything by the amount of people you want to feed.

Ingredients:
6 oz vanilla greek yogurt (equivalent to one individual container)
1 tablespoon peanut butter
1/2 tablespoon honey or maple syrup (you decide!)
cinnamon
1 green apple, sliced

Directions: 
Combine first 3 ingredients until smooth.  Sprinkle cinnamon on top and serve with a sliced apple to dip in.

Painted Coffee Table


Here I go again, painting old items to make them "new" (and fabulous).
One of my favorite DIY projects in our condo is the coffee table that I painted.  Eric and I had an old brown wood coffee table that we were going to toss but last minute I decided to see if I could paint it to our liking.  Luckily, I was able to to paint it to our loving! All I did here was paint the legs and base black and then made black and white stripes for the top.  To make the stripes even I used thick painting tape (my favorite). For anyone who has old furniture laying around that they want to toss, hold that thought and try painting it first. As always, I used acrylic paint so it dried quickly and didn't cost much.  One piece of advice I have is to make sure the paint is totally dry before you put the painters tape on, otherwise when you rip the tape off you might get some paint with it too!

Tasty Green Juice


We all know eating your greens is right up there in importance next to sleep and exercise.  Start your day off right with this truly delicious green juice.  The spinach can be replaced with Kale if you prefer kale over spinach. 

Ingredients:
1 Kiwi
10 Green Grapes
large handful of Spinach
1/2 Banana
1/2 green apple
1/4 cup Orange Juice
1/4 cup water

Directions:
Add all ingredients to a blender and blend until smooth.

St. Patrick's Day Treats


In the mood for some St Patrick's Day treats? So am I! Here are 3 quick and easy treats to make your St. Patrick's Day much sweeter

Fruit Skewers:
Place melon, grapes and kiwi slices on a wood skewer and serve

Lucky Charm Rice Krispies
Melt 3 tbsp butter in a large saucepan over low heat.  Add 40 marshmallows and stir until marshmallows are melted.  Mix in 6 cups of Lucky Charms. Flatten into a baking dish and let cool. Cut into squares and serve

Green Chocolate Pretzel Bites
Preheat oven to 175.  Lay pretzels on a baking sheet and place a Hershey Hug or Kiss on each pretzel.  Bake for about 3 minutes, or until kiss is melted.  Remove pretzels from the oven and place a green M&M on top. Let cool before serving

Prints with a Purpose

The best way to transition into spring is with a closet refresh. Even though temps don't warrant pulling out last year's springtime favorites, you can still brighten up your look with printed pieces. Prints are everywhere for spring, coming in all different forms; floral, geometric, and mirrored prints just to name a few.  I've found a handful amazing wear now pieces in prints I just can't resist!  Act fast because a few of the pieces are already marked down (even more of a reason to buy) and won't last long.

Healthy Chicken Parmesan


Chicken parmesan is a dish that can be revamped easily, eliminating all of the butter, oil and excess fat from the dish.  Here's my version of a slimmed down Chicken Parmesan.  It's quick and can be done in under 45 minutes.  I portioned out the recipe for one so make sure to prep accordingly if you're cooking for more than one.

Ingredients:
1 chicken breast, pounded thin
1 thin slice of fresh mozzarella cheese (I like Bel Gioioso)
pinch grated parmesan cheese
1/2 cup marinara sauce (pick one low in sugar)
little less than 1/4 cup Italian seasoned breadcrumbs
oregano
salt and pepper to taste
optional: pinch of chopped fresh basil

Directions:
Preheat the oven to 425.  
Combine the breadcrumbs and grated parmesan cheese.  Coat both sides of the chicken breast with the breadcrumb and cheese mixture.  Spray a baking sheet with cooking spray and place the chicken on the baking sheet. Bake for about 30 minutes. Turn them once, about 20 minutes in.  After chicken is done cooking turn the oven off.  Remove the chicken and top with marinara sauce and slice of mozerella cheese.  Sprinkle salt, pepper and oregano on top.  If you have chopped fresh basil add a pinch of that on top for extra flavor. Place the chicken topped with sauce and cheese back in the oven and let sit in the warm oven a few minutes until the cheese melts.
You can serve this on its own or atop a small serving of while wheat spaghetti for a satisfying and slimmed down meal. Serves 1.

Shrimp Avocado Tacos


These Shrimp Tacos are seriously delicious.  They're simple to make and if you buy your shrimp cooked then it only takes about 15 minutes to throw together. Enjoy!

Ingredients:
2 small Tortillas
6 large cooked shrimp
1/4 Teaspoon crushed red pepper
1 tablespoon olive oil
1 cup broccoli slaw
Salt and pepper to season
1/4 Cup chopped fresh cilantro
juice of one lime
half an avocado 

Directions:
Heat a skillet over medium heat and add olive oil and crushed red pepper. Once pan is hot, add the shrimp and saute until both sides are cooked and golden brown.  Add the broccoli slaw to the pan and cook about 1 minute.
In a small bowl, mash the avocado and then mix in lime juice in cilantro.  Stir until combined. Season with Salt and pepper.
Heat tortillas up and then add shrimp, broccoli slaw and dressing to your tortilla.

DIY Painting


What was once an enormous painting of gold and red flowers is now the painting pictured above. I wanted to share this idea with you because it's one that saved me a lot of money! When Eric and I moved into our new place we were looking for affordable ways to decorate.  We had an old painting that I was going to toss but decided to save and use the frame for something else.  Because the size of the picture was so oversized, I had a hard time finding art to fit the frame. Then it dawned on me to just keep the current picture in the frame but paint something new over it.  And that's exactly what I did:) 

All I had to do was paint a few layers of white paint over the existing painting so that I had a blank canvas to do what I wanted.  I looked up painting ideas on pinterest and stumbled upon one that looks similar to the one I did above. I did my best to copy it and I think it turned out pretty good! Next time you need a room refresher consider this idea. Even if you don't think of yourself as an artist painting shouldn't scare you away. The painting I did is literally a bunch of lines-ANYONE and I really mean anyone can do this.  All it requires is a little patience and some acrylic paint.

Record low temps leave skin feeling extra dry and that's certainly no fun.  I was sick of dry puffy eyes so I went looking for a mildy priced yet effective eye cream. Healthy Super Bowl Snacks

Well, tomorrow's the day. The day that everyone in America sits on their couch and eats and drinks in front of the TV. H&M Fit and Flare Skirt



Holy Compliments! I wore the pictured H&M Fit and Flare Jacquard-weave Skirt to work last week and got a zillion compliments.  Lately, I’m loving the fit and flare skirt body--like can't get enough of it must find one in every print/color available. Why should you love the fit and flare? For starters, it’s flattering.  It’s a slim fit through the hips and then flares out at the bottom.  I like the fact that it’s fitted at the top because it shows your shape.  The length is right on- hits above the knees but is long enough to wear to work.  Lastly, depending on how you style the skirt it can be dressed up or dressed down- multiple end uses are my favorite. Wear it with a baggy graphic tee and printed tights for a casual feel, or dressed up with a sweater and riding boots for work.

Pomegranate Apple Salad


I went out to eat with a friend last week and had the most delicious pomegranate apple salad.  Needless to say I tried my own take on it over the weekended and it turned out pretty tasty! Here's the recipe:

Ingredients:
For the Salad
Chopped romaine lettuce
2 tablespoons pomegranate seeds
Feta cheese
1/3 green or tart red apple
2 tablespoons toasted walnuts

For the Dressing
1.5 tablespoon olive oil
1 tablespoon red wine vinegar
1 tablespoon Dijon mustard
tiny splash balsamic vinegar
Pinch of sugar

Directions: 

Only directions here are to place all salad ingredients into a large bowl.  Combine all dressing ingredients and stir until blended. Top salad with dressing and enjoy!

Salmon with Mango and kiwi salsa




Ingredients:
2  6 ounce salmon fillets
2 teaspoon low sodium soy sauce
1 tablespoon honey
1 teaspoon olive oil
¼ teaspoon black pepper

For the Salsa
½ chopped kiwi
½ cup chopped mango
About ¼ cup chopped cilantro
¼ cup orange juice

Directions:
Marinate the salmon in a baggie for 30 minutes with the honey, soy sauce, olive oil and pepper. Heat a skillet over medium high heat and cook the fish for 5 minutes on each side.  Depending on the thickness of your fillet you may need additional cooking time.
For the salsa, combine all ingredients and serve over the fish.
Enjoy! 

Healthy Chicken Chow Mein


This is a quick recipe that's easy to throw together for a fast meal.  Feel free to add additional veggies such as mushrooms and edamame beans to make it even healthier!

Ingredients:
1.5 cups of green beans, about 20-25 total
2 boneless skinless chicken breasts
3/4 cup low sodium chicken broth
1 tbsp sesame oil
1 teaspoon sugar
2 tablespoons soy sauce
1/3 red onion
1/4 teaspoon crushed red pepper flakes
1 tablespoon ground bottled ginger
3 tablespoons peanuts, chopped up into small pieces
2 6 ounce packages of chow mein noodles


Directions
Cook chicken in a frying pan with a drizzle of olive oil and the sesame oil over medium heat until cooked through.  Add chopped red onion and ginger to the pan and sauté for about 4 minutes. Cut the green beans in half length wise and add them to the pan.  Sauté about 2 minutes. In a bowl, mix soy sauce, sugar, chicken broth and red pepper flakes.  Add the broth mixture and peanuts to the pan, reduce the heat to low.  Add the Noodles to the pan and give them a good mix. Continue to cook on low until the noodles are warm enough to eat.

The last piece I'll leave you with is something every lady should own.  The J Crew White Crystals Bubble Necklace is a statement necklace that has just the right amount of sparkle for everyone.  I love this piece and wear it all the time! I'll pair it with a black dress for a fancy evening or put it with jeans and a blazer for a casual friday look.   Oh, and did I mention, this is also under $20?!

How to ask your Bridesmaids to be your Bridesmaids?

Over the Holidays I spent a lot of time with some of my favorite people, including my now confirmed bridesmaids!   I knew I would be seeing all of the ladies I wanted to ask to be a part of my special day,  so in preparation I took to the internet to find a crafty and cute way to ask.  

My findings? What better way to ask than with a bottle of wine?  So I did just that:) I went on myownlabels.com and created custom wine labels that read " Got my Guy, Need my Girls, Will you be my Bridesmaid?"


The labels came out just the way I wanted them.  I have 5 bridesmaids and to make and order the labels it only cost $11 total.  I even made a special label for my Maid of Honor :) After I got the labels in the mail I bought 5 bottles of wine that had plain labels on them so I could stick my custom labels right on top without any mess.  



To add a little bit of surprise I wrapped the wine bottles up so they wouldn't see until they opened them.  I had so much fun with this project and my bridesmaids all loved the idea.   If you're newly engaged and looking for a way to ask your bridesmaids to be a part of your wedding here's your answer. Even if wedding bells aren't in your future, creating your own wine labels is a great idea for party favors or Birthdays.
