Korean Tacos

My best friend showed me this Korean Taco recipe and I can't get enough!  We made them last week and I've already made them for a second time since.  These tacos are spicy and fresh, I highly recommend making them!

Corn tortillas
2 chicken breasts
2 long carrots, shredded
1 cup cherry tomatoes, sliced
1 bunch green onions, sliced
cilantro- optional

Sauce ingredients:
1/4 cup soy sauce
2 tbsp siracha
2 tbsp olive oil
2 tbsp rice vinegar
Juice from 1 lime

Cut up chicken breast into small pieces and cook over medium heat with cooking spray.  Combine all sauce ingredients and set aside. Once chicken is done cooking add sauce to the chicken and let simmer until sauce thickens, about 4 minutes.  Warm up tortilla shells and spoon chicken mixture into shells. Serve with carrots, diced onion and tomato and cilantro.
