Zucchini Bread

Are cooling temps chilling your mood? Bring the warmth inside with some baked zucchini bread.  This fuss free recipe takes about 20 minutes to prep and an hour to cook.  Cozy up with a bite of bread and some cider and you've got a warm pick me up.  Enjoy!

Dry ingredients:
2 cups whole wheat flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
3 tsp cinnamon

Other ingredients:
3 eggs
3/4 cup vegetable oil
1 1/2 cups sugar
1/2 cup honey
3 tsp vanilla
2 cups grated zucchini

Preheat oven to 325 degrees.  In a large bowl combine all dry ingredients and sift together.  In a separate bowl beat eggs, sugar, oil, honey and vanilla until smooth.  Add dry ingredients and mix until just blended.  Add the zucchini and stir until combined. Divided into 2 greased loaf pans and bake for 40-50 minutes, or until toothpick inserted comes out clean.
